&lt;/span&gt;Zucchini doesn’t exist in France.&lt;span style=""&gt; &lt;/span&gt;France has courgettes, and we have entered the season of courgettes.&lt;span style=""&gt; &lt;/span&gt;However -- about ten years ago, I was in southern France on a business trip with a great friend, and we ventured out into a tiny medieval town tucked into a hill.&lt;span style=""&gt; &lt;/span&gt;The hotel had recommended the restaurant for offering food that would please the two of us, both vegetarians.&lt;span style=""&gt; &lt;/span&gt;We took a taxi and entered the little village and then the restaurant, a medieval building that had been adapted to a wonderful restaurant.&lt;span style=""&gt; &lt;/span&gt;The owner and chef greeted us and took us to a table in the back, through the kitchen.&lt;span style=""&gt; &lt;/span&gt;He moved the long table, disrupting somewhat a German couple already seated at the other end, and asked us what we wanted.&lt;span style=""&gt; &lt;/span&gt;We negotiated in not terribly polished French, and left ourselves in his hands.&lt;span style=""&gt; &lt;/span&gt;It was a wonderful meal, and the one single food that stands out in my memory remains the courgettes in mustard sauce.&lt;span style=""&gt; &lt;/span&gt;The dish was simple, a whole courgette sitting in the middle of mustard sauce.&lt;/p&gt;&lt;hr style="width: 100%; height: 2px;" /&gt;&lt;p style="margin: 0in 0in 10pt;"&gt;&lt;br /&gt;&lt;span style=""&gt; &lt;/span&gt;&lt;/p&gt; &lt;p style="margin: 0in 0in 10pt;"&gt;Courgettes, our zucchini, is often under-cooked and can lack flavor, particularly when it is late season or overgrown.&lt;span style=""&gt; &lt;/span&gt;This zucchini was tender, flavorful, and very zucchini-ish.&lt;span style=""&gt; &lt;/span&gt;The mustard sauce was creamy and a great setting for the vegetable.&lt;span style=""&gt; &lt;/span&gt;It was such a simple preparation, and I’ve wanted to re-create it ever since.&lt;/p&gt; &lt;p style="margin: 0in 0in 10pt;"&gt;It doesn’t sound like much of a challenge, but research gives dismaying results.&lt;span style=""&gt; &lt;/span&gt;Mustard sauce appears to be heavy cream with mustard added.&lt;span style=""&gt; &lt;/span&gt;Heavy cream is not exactly healthy, and I avoid using it except when it’s the only option, and those tend to be treats.&lt;span style=""&gt; &lt;/span&gt;Zucchini in heavy cream is hard to justify when there are so many wonderful ways to cook and enjoy zucchini without heavy cream.&lt;span style=""&gt; &lt;/span&gt;But the wish to re-create the courgettes I tasted in the south of France remains.&lt;span style=""&gt; &lt;/span&gt;&lt;/p&gt; &lt;p style="margin: 0in 0in 10pt;"&gt;How to cook zucchini – without cream?&lt;span style=""&gt; &lt;/span&gt;&lt;/p&gt; &lt;p style="margin: 0in 0in 10pt;"&gt;Sauté &lt;em style=""&gt;very&lt;/em&gt; thinly sliced zucchini in olive oil with several sliced cloves of garlic and as the zucchini softens and becomes transparent, cook the pasta.&lt;span style=""&gt; &lt;/span&gt;If you love butter, add a tablespoon with the oil to create a buttery taste without adding tons of butter itself.&lt;span style=""&gt; &lt;/span&gt;Drain the cooked pasta and combine with the sautéed garlic.&lt;span style=""&gt; &lt;/span&gt;For 4 people, use 4-8 medium zucchini, or as much as you enjoy.&lt;span style=""&gt; &lt;/span&gt;&lt;/p&gt; &lt;p style="margin: 0in 0in 10pt;"&gt;Zucchini is full of water, so you can use a lot of zucchini to start and end up with not so much zucchini to consumer.&lt;span style=""&gt; &lt;/span&gt;If you use yellow zucchini or yellow summer squash, expect more liquid from the vegetable as it cooks and be prepared.&lt;span style=""&gt; &lt;/span&gt;You can pour off the extra liquid, add some bulgur wheat and let it sit a while the pasta boils.&lt;span style=""&gt; &lt;/span&gt;The bulgur will soak up a lot of liquid given time.&lt;/p&gt; &lt;p style="margin: 0in 0in 10pt;"&gt;Variation?&lt;span style=""&gt; &lt;/span&gt;Add 1-2 cups of ricotta cheese and some of the pasta cooking water as part of the mix.&lt;span style=""&gt; &lt;/span&gt;&lt;/p&gt; &lt;p style="margin: 0in 0in 10pt;"&gt;Variation?&lt;span style=""&gt; &lt;/span&gt;Crumble 4 ounces of feta cheese on top of the zucchini, add some pasta cooking water, and toss with the pasta.&lt;span style=""&gt; &lt;/span&gt;&lt;/p&gt; &lt;p style="margin: 0in 0in 10pt;"&gt;Variation?&lt;span style=""&gt; &lt;/span&gt;Add 1 /4 - 1/3 cup of lemon juice when mixing the zucchini with the pasta.&lt;span style=""&gt; &lt;/span&gt;&lt;/p&gt; &lt;p style="margin: 0in 0in 10pt;"&gt;Variation?&lt;span style=""&gt; &lt;/span&gt;Top any version with freshly grated cheese and/or toasted bread crumbs.&lt;span style=""&gt; &lt;/span&gt;&lt;/p&gt; &lt;p style="margin: 0in 0in 10pt;"&gt;How can you go wrong?&lt;/p&gt; &lt;p style="margin: 0in 0in 10pt;"&gt;Well, we went “right,” finally, last week and created the Courgettes and Creamy Mustard Sauce (I wonder if that would be &lt;em style=""&gt;Courgettes en Sauce Moutarde&lt;/em&gt;?&lt;span style=""&gt; &lt;/span&gt;My French is pretty rusty).&lt;span style=""&gt; &lt;/span&gt;It’s as good or better as any zucchini dish I could imagine.&lt;span style=""&gt; &lt;/span&gt;Yum.&lt;span style=""&gt; &lt;/span&gt;It is the heavy cream abuse for the summer.&lt;/p&gt; &lt;p style="margin: 0in 0in 10pt;"&gt;&lt;strong style=""&gt;Zucchini in Mustard Sauce&lt;/strong&gt;&lt;/p&gt; &lt;p style="margin: 0in 0in 10pt;"&gt;4-6 medium zucchini, cleaned, sliced ½”&lt;/p&gt; &lt;p style="margin: 0in 0in 10pt;"&gt;2-3 T. olive oil&lt;/p&gt; &lt;p style="margin: 0in 0in 10pt;"&gt;½ c. heavy cream&lt;/p&gt; &lt;p style="margin: 0in 0in 10pt;"&gt;2 T. Dijon mustard&lt;/p&gt; &lt;p style="margin: 0in 0in 10pt;"&gt;Toss the zucchini slices in the oil and sauté them, letting them a bit brown and also soft.&lt;span style=""&gt; &lt;/span&gt;You should be able to smell the zucchini, and they will be somewhat transparent.&lt;span style=""&gt; &lt;/span&gt;&lt;/p&gt; &lt;p style="margin: 0in 0in 10pt;"&gt;Place the zucchini in a 9x13 or other casserole dish – to allow the zucchini to cover the bottom but not be in thick piles.&lt;span style=""&gt; &lt;/span&gt;Mix the cream and mustard and pour on top of the zucchini, distributing the sauce all over.&lt;span style=""&gt; &lt;/span&gt;Bake at 450° for about 15 minutes, or until the sauce reduces and thickens and starts to brown at the edges.&lt;/p&gt; &lt;p style="margin: 0in 0in 10pt;"&gt;Enjoy!&lt;span style=""&gt; &lt;/span&gt;And if the guilt is too much, adapt with less-high fat yogurt:&lt;/p&gt; &lt;p style="margin: 0in 0in 10pt;"&gt;&lt;strong style=""&gt;Zucchini in Mustard Sauce – with less guilt&lt;/strong&gt;&lt;/p&gt; &lt;p style="margin: 0in 0in 10pt;"&gt;4-6 medium zucchini, cleaned, sliced ½”&lt;/p&gt; &lt;p style="margin: 0in 0in 10pt;"&gt;2-3 T olive oil&lt;/p&gt; &lt;p style="margin: 0in 0in 10pt;"&gt;½ c. high fat plain yogurt (4-10% milkfat, a lot less than 35-45% milkfat in heavy cream)&lt;/p&gt; &lt;p style="margin: 0in 0in 10pt;"&gt;2 T. Originally built to serve the inland port and bring                                water from the Seine to the Bastille, today it is a marina                                bordered by terraces, pergolas and a rose garden. A tunnel                                at one end leads to the Saint Martin canal. &lt;/p&gt;                           &lt;p&gt; Property developers have spoiled the banks with ugly glass                              and concrete apartment buildings, but this is still a lovely                              place to come in October, when dead leaves pile up in the                              fading, straw-colored autumn light. Teeming factories, bustling                              workshops, docks loaded with plaster, bargemen's bistros and                              penniless girls once lined the quays from Stalingrad to Bastille.                              The straight, 4.5-kilometer canal, which split the city between                              middle-class quarters on the west and working-class neighborhoods                              to the east, was built by hand in 1825. &lt;/p&gt;                           &lt;p&gt;&lt;img style="width: 353px; height: 229px;" src="http://www.paris-eiffel-tower-news.com/walking/canaux01.jpg" class="img1" alt="" /&gt;                             &lt;/p&gt;&lt;p&gt; Napoleon had ordered the artificial waterway dug to supply                                Paris with water and provide a shortcut that would avoid navigating                                a long, circuitous bend in the Seine. By the 1960s, traffic                                had dwindled to a trickle and the canal narrowly escaped being                                filled in and paved over for a highway. Cars on                              the rue de Crimée, which bisects the canal, must often wait                              for the drawbridge to close as it lets his boat through. Steve                              entertains his passengers with an endless flow of funny commentary.                              "Why are Spanish tourists on the bateaux-mouches always straining                              their necks and looking back at monuments two kilometers upstream?",                              he asks. The passengers are stumped. "Because by the time                              they hear the Spanish translation, the landmark being described                              is already two or three bridges behind!" One of the most common example of such a problem relates to room and bed sizes. American travellers are used to larger rooms and beds than the average room and bed sizes offered by Paris hotels. This ‘size gap’ originates in history and genetics: space is scarcer in Paris than in Boston or Chicago, and French people tend to have smaller bodies than American people.&lt;/p&gt;       &lt;p&gt; Moreover, the French rating system does not measure service quality, a major issue with travellers. This vacuum was calling for a full reply. &lt;/p&gt;       &lt;p class="style4"&gt; The meaning of stars in the US &lt;/p&gt;       &lt;p&gt;Let me clear something right away. There is absolutely zero relationship whatsoever between the number of stars commercial travel sites award to hotels, and the hotel rating system in use in France. &lt;/p&gt;       &lt;p&gt;Commercial travel sites don’t take their cues from the French system, and the latter does not bother with the former’s ratings. &lt;/p&gt;       &lt;p&gt;The core business of commercial travel sites is to sell you hotel rooms, flight tickets, car rentals, and cruise packages. They purport to guide your choice by awarding stars to their products. &lt;/p&gt;       &lt;p&gt;Whether these sites’ star ratings are free from any mercantile bias is debatable. When you book a room on a commercial travel site, a significant portion of your money goes to the travel site which presents the hotel. On certain well-known travel sites, the hotel can pay as much as 50% of your booking to the site operator. (I will soon publish a report on the topic on my website.) &lt;/p&gt;       &lt;p&gt;So in my humble opinion, the objectivity of the number of stars awarded by commercial travel websites to any hotel is a matter of debate. &lt;/p&gt;       &lt;p&gt;To make matters worse, each travel website uses its own private rating method. It is practically impossible to compare the ratings given by two websites to the same hotel. Just like comparing apples and oranges. &lt;em&gt;Consumer Report &lt;/em&gt;published an interesting article on this problem in their November 05 issue. &lt;/p&gt;       &lt;p&gt;In other words, the number of stars awarded by commercial travel sites is not a fully reliable yardstick for selecting a hotel.&lt;/p&gt;       &lt;p class="style4"&gt; The meaning of stars in France &lt;/p&gt;       &lt;p&gt;The French hotel rating system works on a completely different set of rules.&lt;/p&gt;       &lt;ol&gt;&lt;li&gt; It is a standardized system: meaning, all hotels across France are categorized on the basis of a unique system. A 3-star in Paris will have to comply with almost the same criteria as a 3-star in the countryside. Comparability is 98% ensured.&lt;br /&gt;         &lt;br /&gt;        &lt;/li&gt;&lt;li&gt; The rating system was not born out of mercantile purposes: it was framed by the French lawmakers. This means that no hotel can be ‘upgraded’ a star or two because it pays a fatter booking commission to a website operator. Under the law a hotel qualifies for a specific star category, and not for the next one up. Period.&lt;br /&gt;            &lt;br /&gt;           &lt;/li&gt;&lt;li&gt; Lastly, and this is the most important factor, the French rating system does not measure quality. It measures quantities. Quality is partly a matter of opinion. Quantities are measurable, verifiable, quantifiable. &lt;/li&gt;&lt;/ol&gt;             &lt;p&gt;The French hotel rating system uses a total set a 22 criteria and sub-criteria to measure the presence or absence of certain features in the hotel, and the square footage devoted to various spaces. &lt;/p&gt;       &lt;p&gt;Based on these objective measurements, the hotel is given its stars by the authorities. &lt;/p&gt;       &lt;p&gt;The owners may of course remodel their hotel, and apply for an upgrade. place is Torino, Italy. It's the early 90s. At the Bliss Corporation -the esteemed home of numerous successful dance music producers, acts, and labels, founded by producer Massimo Gabutti - three young men are brought into the creative talent pool. In this nurturing environment, they individually turn out several top ten European dance floor hits. Now, eight years later, Jeffrey Jey, Maurizio Lobina, and Gabry Ponte (still only 20-somethings), together as Eiffel 65, have tapped a global pulse of club-goers with the international dance/pop phenomenon "Blue (Da Ba Dee)"off their debut U.S. release, Europop, from Republic/Universal. &lt;br/&gt;&lt;br/&gt;&lt;img src="http://www.grafdesign.at/gabry/img/bio1.jpg" border="0" alt="" /&gt;&lt;br/&gt;&lt;br/&gt;Eiffel 65 is formed by Jeffrey Jey (who writes the lyrics) Maurizio Lobina and Gabry Ponte. Maurizio Lobina was born in Asti, he started studying the piano at the age of 5 and got into his first band at the age of ten. He grew up listening to all kinds of music and playing practically everything from house to reggae. This has made Maurizio one of the most incredibly talented Bliss Co. musicians. Famous also for his long and fast fingers. In the BlissCo World he is in charge as well of the A/R Dept. Gabriele is a professionnal DJ, he mixes the tracks for the group and appears on the stage. &lt;br/&gt;&lt;br/&gt;Instantly topping charts in Italy, Germany, The U.K., France, Spain, Holland, Sweden, Finland, Austria, Switzerland, Mexico, Brazil, Canada, Singapore,Taiwan and Hong Kong, "Blue (Da Ba Dee)" is more than a dance/pop track. Once it's heard, it's never forgotten, as its lasting hook, uplifting verses, and body rocking rhythm is pure energy shot straight to the heart. Its inception began with Maurizio's piano riff before Jeffrey wrote the lyrics. &lt;br/&gt;&lt;br/&gt;"Maurizio said 'come up with strange lyrics'," explains Jeffrey. "I started thinking about the way people are and about their lifestyle, which could be the way you buy your house, pick your girlfriend, your job or the neighborhood in which you live. Then I came up with a color, a color that describes someone's lifestyle." Although Jeffrey, Maurizio and Gabry all share a passion for dance and electronic music, they each bring to the group different skills and backgrounds. &lt;br/&gt;&lt;br/&gt;On the first floor of the Tower, the Pavillon Ferrié, wich houses a shop, a post office, a buffet and windows displays, was entirely refurbished. The brasserie on the same level also underwent full conversion. Its decoration by Slavik &amp;amp; Loup was inspired by the theme of airships and gave priority to views over Paris. Every 7 years, some 25 workers climb up the Tower to apply the 60 tonnes of paint needed to ensure its maintenance. The paint is designed to preserve the building's iron and steel struvture. The lucky person was a 33-year-old policwoman, Jacqueline Martinez. To her amazement, she was greeted with the sounds of an orchestra playing Charles Trenet's ''La Tour Eiffel''. Held for more than three months, the exhibition was designed to raise public awareness of Europe's rich 19th-century heritage, of wich the famous Paris landmark is considered as the most remarkable work of art.&lt;br/&gt;&lt;img src="http://www.tour-eiffel.fr/teiffel/gene/image/anecdot/anecdot_121.jpg" border="0" alt="" /&gt;&lt;br/&gt;&lt;br/&gt;1998&lt;br/&gt;&lt;br/&gt;&lt;br/&gt;Tribute to Jules Verne &lt;br/&gt;&lt;br/&gt;On 26th May, the Parisians discovered a huge portrait of Jules Verne hung up between the Tower's first and second floors. This effigy, made after a photgraph by Nadar - a famous turn-of-the-20th-century photgrapher - was composed of 8 cm, black and silver aluminium round discs mounted on 300 m2 of netting, the whole wighing a total of 2.1 tonnes. The Prince of Wales, later King Edward VII of England, opened the tower. Of the 700 proposals submitted in a design competition, Gustave Eiffel's was unanimously chosen. However it was not accepted by all at first, and a petition of 300 names - including those of Maupassant, Emile Zola, Charles Garnier (architect of the Opéra Garnier), and Dumas the Younger - protested its construction.&lt;br/&gt;At 300 meters (320.75 m including antenna), and 7,000 tons, it was the world's tallest building until 1930. He also encouraged several scientific experiments including Foucault's giant pendulum, a mercury barometer and the first experiment of radio transmission. In 1898, Eugene Ducretet at the Pantheon, received signals from the tower. &lt;br/&gt;&lt;br/&gt;&lt;br/&gt;&lt;br/&gt;After Gustave Eiffel experiments in the field of meterology, he begun to look at the effects of wind and air resistance, the science that would later be termed aerodynamics, which has become a large part of both military and commercial aviation as well as rocket technology. Gustave Eiffel imagined an automatic device sliding along a cable that was stretched between the ground and the second floor of the Eiffel Tower. (reference) &lt;br/&gt;The tower was almost torn down in 1909, but was saved because of its antenna used both for military and other purposes, and the city let it stand after the permit expired. When the tower played an important role in capturing the infamous spy Mata Hari during World War I, it gained such importance to the French people that there was no more thought of demolishing it.- used for telegraphy at that time.&lt;br/&gt;&lt;br/&gt;From 1910 and on the Eiffel Tower became part of the International Time Service. French radio (since 1918), and French television (since 1957) have also made use of its stature.&lt;br/&gt;&lt;br/&gt;&lt;br/&gt;&lt;br/&gt; During its lifetime, the Eiffel Tower has also witnessed a few strange scenes, including being scaled by a mountaineer in 1954, and parachuted off of in 1984 by two Englishmen. In 1923 a journalist rode a bicycle down from the first level. Some accounts say he rode down the stairs, other accounts suggest the exterior of one of the tower's four legs which slope outward. (reference) &lt;br/&gt;&lt;br/&gt;&lt;br/&gt;Of the 7.5 million kilowatt hours of electricity used annually, 580 thousand are used exclusively to illuminate the tower. The tower's annual operation also requires the use of 2 tons of paper for tickets, 4 tons of rag or paper wipes, 10,000 applications of detergents, 400 liters of metal cleansers and 25,000 garbage bags.
