Zucchini doesn’t exist in France

Nothing is French about zucchini. Zucchini doesn’t exist in France. France has courgettes, and we have entered the season of courgettes. However -- about ten years ago, I was in southern France on a business trip with a great friend, and we ventured out into a tiny medieval town tucked into a hill. The hotel had recommended the restaurant for offering food that would please the two of us, both vegetarians. We took a taxi and entered the little village and then the restaurant, a medieval building that had been adapted to a wonderful restaurant. The owner and chef greeted us and took us to a table in the back, through the kitchen. He moved the long table, disrupting somewhat a German couple already seated at the other end, and asked us what we wanted. We negotiated in not terribly polished French, and left ourselves in his hands. It was a wonderful meal, and the one single food that stands out in my memory remains the courgettes in mustard sauce. The dish was simple, a whole courgette sitting in the middle of mustard sauce.

Courgettes, our zucchini, is often under-cooked and can lack flavor, particularly when it is late season or overgrown. This zucchini was tender, flavorful, and very zucchini-ish. The mustard sauce was creamy and a great setting for the vegetable. It was such a simple preparation, and I’ve wanted to re-create it ever since.

It doesn’t sound like much of a challenge, but research gives dismaying results. Mustard sauce appears to be heavy cream with mustard added. Heavy cream is not exactly healthy, and I avoid using it except when it’s the only option, and those tend to be treats. Zucchini in heavy cream is hard to justify when there are so many wonderful ways to cook and enjoy zucchini without heavy cream. But the wish to re-create the courgettes I tasted in the south of France remains.

How to cook zucchini – without cream?

Sauté very thinly sliced zucchini in olive oil with several sliced cloves of garlic and as the zucchini softens and becomes transparent, cook the pasta. If you love butter, add a tablespoon with the oil to create a buttery taste without adding tons of butter itself. Drain the cooked pasta and combine with the sautéed garlic. For 4 people, use 4-8 medium zucchini, or as much as you enjoy.

Zucchini is full of water, so you can use a lot of zucchini to start and end up with not so much zucchini to consumer. If you use yellow zucchini or yellow summer squash, expect more liquid from the vegetable as it cooks and be prepared. You can pour off the extra liquid, add some bulgur wheat and let it sit a while the pasta boils. The bulgur will soak up a lot of liquid given time.

Variation? Add 1-2 cups of ricotta cheese and some of the pasta cooking water as part of the mix.

Variation? Crumble 4 ounces of feta cheese on top of the zucchini, add some pasta cooking water, and toss with the pasta.

Variation? Add 1 /4 - 1/3 cup of lemon juice when mixing the zucchini with the pasta.

Variation? Top any version with freshly grated cheese and/or toasted bread crumbs.

How can you go wrong?

Well, we went “right,” finally, last week and created the Courgettes and Creamy Mustard Sauce (I wonder if that would be Courgettes en Sauce Moutarde? My French is pretty rusty). It’s as good or better as any zucchini dish I could imagine. Yum. It is the heavy cream abuse for the summer.

Zucchini in Mustard Sauce

4-6 medium zucchini, cleaned, sliced ½”

2-3 T. olive oil

½ c. heavy cream

2 T. Dijon mustard

Toss the zucchini slices in the oil and sauté them, letting them a bit brown and also soft. You should be able to smell the zucchini, and they will be somewhat transparent.

Place the zucchini in a 9x13 or other casserole dish – to allow the zucchini to cover the bottom but not be in thick piles. Mix the cream and mustard and pour on top of the zucchini, distributing the sauce all over. Bake at 450° for about 15 minutes, or until the sauce reduces and thickens and starts to brown at the edges.

Enjoy! And if the guilt is too much, adapt with less-high fat yogurt:

Zucchini in Mustard Sauce – with less guilt

4-6 medium zucchini, cleaned, sliced ½”

2-3 T olive oil

½ c. high fat plain yogurt (4-10% milkfat, a lot less than 35-45% milkfat in heavy cream)

2 T. Dijon mustard

Follow the instructions above.

The alternative has some fat, but less fat, and lots of flavor. I tried it with Greek yogurt, no fat, plain, also, and it was nice, but not creamy enough. I’d use the no fat Greek yogurt again, but given a chance, I’d set my compromise on high fat yogurt and enjoy every taste.

Except for the 12^th arrondissement, which includes the Bois de Vincennes, the 14^th has the highest amount of park acreage in Paris, ranging from the tiny Papillon garden off the little rue de Châtillon to the 16-hectare Parc Montsouris. Those are the spaces open to the public. Then there are the private courtyards, villas and cobblestone, verdant dead ends. The sisters of Saint Joseph de Cluny still grow their own tomatoes on the rue Méchain. The ring road is greed and red, with the red of the brick apartment houses lining the Boulevard Brune mixing with the green of many gardens.

The 14^th arrondissement is also home to all the major hospitals of Paris as well as the Santé prison, the only house of detention still inside the city limits. The population of the residential Montsouris quarter has been declining, but in the Plaisance neighborhood it is increasing. The Bassin de l'Arsenal was excavated in 1806 on the site of the moat of the former Charles V wall that once enclosed the city. Originally built to serve the inland port and bring water from the Seine to the Bastille, today it is a marina bordered by terraces, pergolas and a rose garden. A tunnel at one end leads to the Saint Martin canal.

Property developers have spoiled the banks with ugly glass and concrete apartment buildings, but this is still a lovely place to come in October, when dead leaves pile up in the fading, straw-colored autumn light. Teeming factories, bustling workshops, docks loaded with plaster, bargemen's bistros and penniless girls once lined the quays from Stalingrad to Bastille. The straight, 4.5-kilometer canal, which split the city between middle-class quarters on the west and working-class neighborhoods to the east, was built by hand in 1825.

Napoleon had ordered the artificial waterway dug to supply Paris with water and provide a shortcut that would avoid navigating a long, circuitous bend in the Seine. By the 1960s, traffic had dwindled to a trickle and the canal narrowly escaped being filled in and paved over for a highway. Then it was turned into a pleasure canal where Parisians and visitors enjoy leisurely boat rides, sailing through the heart of Paris from one lock to the next.

Steve Zade, a 53-year-old British-born "gastronomic refugee", is a guide aboard the Canotier, which sets out with international tourists from La Villette every day. Cars on the rue de Crimée, which bisects the canal, must often wait for the drawbridge to close as it lets his boat through. Steve entertains his passengers with an endless flow of funny commentary. "Why are Spanish tourists on the bateaux-mouches always straining their necks and looking back at monuments two kilometers upstream?", he asks. The passengers are stumped. "Because by the time they hear the Spanish translation, the landmark being described is already two or three bridges behind!" The tourists burst into laughter, certain they have made the right choice about how to spend their day.

Once a small village, in the nineteenth century La Villette became France's fourth-busiest port. A walled-up warehouse on the basin nobly stands across from a 30-story skyscraper. The warehouse was built in 1885 to store sugar, grain and wine that bargemen unloaded from their boats. On the opposite side, a vacant lot marks the spot where the warehouse's twin stood until it burned down in 1990.

At the Jaurès lock, the first of nine that compensates for the 29-meter difference in altitude from one of the canal to the other, the waterway really seems to enter Paris. The Rotonde de la Villette, a former 18^th-century customs house designed by Nicolas Ledoux that once formed part of the wall around the city, stands a little further away. The names of other former customs houses are engraved in the stone.

The canal did not exist yet when the sinister, medieval Mont Faucon gallows that inspired the poet François Villon to write Ballade des pendus (Hanged Men Walking) stood at the intersection of the rue de la Grange-aux-Belles, the Saint Martin's lock, the Quai de Jemmapes and the rue Louis Blanc. A series of graceful, lacy, openwork steel bridges surrounded by lush greenery spans this stretch of the canal. The Hotel du Nord, which is famous for being the setting of Marcel Carné's classic 1930s film of the same name, stands near the Récollets lock.

The canal passes under the swing bridge on the rue Dieu and through the Temple lock before flowing underground to the Bastille. Skylights piercing the tunnel's ceiling cast an eerie greenish glow as the canal passes beneath the Boulevard Richard-Lenoir for two kilometers until flowing into the Seine at the Bassin de l'Arsenal.

Though the French rating system is based on objective, measurable criteria, this does not mean travellers’ expectations will be fulfilled automatically.

First, there are keen differences in perception between populations. One of the most common example of such a problem relates to room and bed sizes. American travellers are used to larger rooms and beds than the average room and bed sizes offered by Paris hotels. This ‘size gap’ originates in history and genetics: space is scarcer in Paris than in Boston or Chicago, and French people tend to have smaller bodies than American people.

Moreover, the French rating system does not measure service quality, a major issue with travellers. Though a hotel can fully comply with the 3-star criteria, the cleanliness of its bathrooms may not be fully satisfactory. The receptionist may have a bad attitude problem. The hotel management may be slow to fix a plumbing problem in a room. All such issues may compound each other to inflict a revolting experience to a hotel guest.

Because the French system does not measure the quality of service over time, it may be chancy to base your choice of hotel solely on the french star rating.

To afford the best chances to pick the right hotel in Paris I would recommend you to take 4 steps:

have a basic understanding of the French rating criteria (see above link to download them),
check the guests’ reviews on www.travelocity.com, and
visit the hotel’s own website,
do not hesitate to e-mail your questions to the hotel owners

For those of you who are not familiar with the service provided by Travelocity, thousands of travellers use this website to write reviews on the hotels they stayed at. As always with such an open forum, you will find both extreme judgments and moderate opinions.

My advice: if a hotel fetches 4 or 5 acceptable-to-good reviews and a couple of very bad ones, put the latter on account of a bad hair day. I don’t know of any hotel which satisfies 100% of its guests throughout the year. Favor moderate reviews with some flesh on the bones: they will usually give you a useful picture of what to expect from the hotel, good and less good.

Visiting the hotel’s own website (make sure it is the hotel’s own) will allow you to view the rooms and bathrooms, and form a better idea of what you can expect. I insist on visiting the hotel’s own website because it is usually the website where you will find the largest number of photos. Commercial travel websites usually skimp on photos.

Lastly, e-mailing your questions to the hotel owners may or may not get you an answer. This usually depends on the proficiency of the receptionist in your language. People at the front desk may shy away from responding by email, just because they don’t feel comfortable writing in a foreign language. Naturally, receiving informative answers to your questions is a good sign that the hotel cares, and that its personnel strives to serve their prospective guests well.

Different Between Star at Paris and USA

There is indeed a resounding absence of solid information in regards to the meaning of ‘hotel stars’ in France, and well-known travel websites. This vacuum was calling for a full reply.

The meaning of stars in the US

Let me clear something right away. There is absolutely zero relationship whatsoever between the number of stars commercial travel sites award to hotels, and the hotel rating system in use in France.

Commercial travel sites don’t take their cues from the French system, and the latter does not bother with the former’s ratings.

The core business of commercial travel sites is to sell you hotel rooms, flight tickets, car rentals, and cruise packages. They purport to guide your choice by awarding stars to their products.

Whether these sites’ star ratings are free from any mercantile bias is debatable. When you book a room on a commercial travel site, a significant portion of your money goes to the travel site which presents the hotel. On certain well-known travel sites, the hotel can pay as much as 50% of your booking to the site operator. (I will soon publish a report on the topic on my website.)

So in my humble opinion, the objectivity of the number of stars awarded by commercial travel websites to any hotel is a matter of debate.

To make matters worse, each travel website uses its own private rating method. It is practically impossible to compare the ratings given by two websites to the same hotel. Just like comparing apples and oranges. Consumer Report published an interesting article on this problem in their November 05 issue.

In other words, the number of stars awarded by commercial travel sites is not a fully reliable yardstick for selecting a hotel.

The meaning of stars in France

The French hotel rating system works on a completely different set of rules.

It is a standardized system: meaning, all hotels across France are categorized on the basis of a unique system. A 3-star in Paris will have to comply with almost the same criteria as a 3-star in the countryside. Comparability is 98% ensured.
The rating system was not born out of mercantile purposes: it was framed by the French lawmakers. This means that no hotel can be ‘upgraded’ a star or two because it pays a fatter booking commission to a website operator. Under the law a hotel qualifies for a specific star category, and not for the next one up. Period.
Lastly, and this is the most important factor, the French rating system does not measure quality. It measures quantities. Quality is partly a matter of opinion. Quantities are measurable, verifiable, quantifiable.

The French hotel rating system uses a total set a 22 criteria and sub-criteria to measure the presence or absence of certain features in the hotel, and the square footage devoted to various spaces.

Based on these objective measurements, the hotel is given its stars by the authorities.

The owners may of course remodel their hotel, and apply for an upgrade. The review process will be based on the same criteria as before, and the re-rating will be decided on the basis of compliance with the same objective measurements.

Rickety writing and predictable plotting may be the hallmarks of these books, but there's no denying that these mysteries are also chock-full of factual information regarding real places. Nonetheless, libraries may question whether or not they wish to purchase a title that assumes that dark-skinned men are obvious terrorist suspects. The place is Torino, Italy. It's the early 90s. At the Bliss Corporation -the esteemed home of numerous successful dance music producers, acts, and labels, founded by producer Massimo Gabutti - three young men are brought into the creative talent pool. In this nurturing environment, they individually turn out several top ten European dance floor hits. Snow is coll, yeach.. its really cool, but if you stay at eiffel at snow with your beloved people, I thing you will forget the cool, just feel the romantic.
I suggest you to bring some chocolate and don't forget to use your jacket.

Becarefull with the snow storm, prepare all equipment if you going to look eiffel at snow fall.

However you can built your own snow man, or snow eiffel tower.

1996

Refurbishing of the 1st floor

On the first floor of the Tower, the Pavillon Ferrié, wich houses a shop, a post office, a buffet and windows displays, was entirely refurbished. The brasserie on the same level also underwent full conversion. Its decoration by Slavik & Loup was inspired by the theme of airships and gave priority to views over Paris. The brasserie was given the name ''Altitude 95'', a reference to air navigation indicating its position 95 metres above sea level.

1995

17th Painting Campaign

The Eiffel Tower underwent its 17th painting campaign since it was built. Every 7 years, some 25 workers climb up the Tower to apply the 60 tonnes of paint needed to ensure its maintenance. The paint is designed to preserve the building's iron and steel struvture. The current bronze colour was finally adopted 20 years ago after many variants were tested out, from reddish-brown to yellow ochre.


1994

An indian on the Eiffel Tower

''Un indien dans la ville'', a French film by Hervé Palud featuring actors Thierry Lhermitte and Patrick Timsit, was released. In the film, the hero of an amazing adventure brings back to Paris a son of his, who was brought up in a remote village of Amazonia. The little boy, called Mimi-Siku and performed by Ludwig Briand, plays truant, venturing out alone in Paris to end up climbing the Eiffel Tower. The film met with great success and was later given a remake in the United States.



1993

The 150 Millionth visitor

On Monday 30th August at 5.51 p.m., the Eiffel Tower hosted its 150 millionth visitor. The lucky person was a 33-year-old policwoman, Jacqueline Martinez. To her amazement, she was greeted with the sounds of an orchestra playing Charles Trenet's ''La Tour Eiffel''. Showered with gifts, she drove away from the Eiffel Tower at the wheel of a brand new car.

The Eiffel Tower in Florence

The Eiffel Tower took an unexpected trip to Italy when the city of Florence staged, in the building housing the National Archives, a large-scale exhibition dedicated to the Tower: ''From Tuscany to Gustave Eiffel's Europe, the Eiffel Tower on the banks of the Arno''. Held for more than three months, the exhibition was designed to raise public awareness of Europe's rich 19th-century heritage, of wich the famous Paris landmark is considered as the most remarkable work of art.

Tribute to Jules Verne

On 26th May, the Parisians discovered a huge portrait of Jules Verne hung up between the Tower's first and second floors. This effigy, made after a photgraph by Nadar - a famous turn-of-the-20th-century photgrapher - was composed of 8 cm, black and silver aluminium round discs mounted on 300 m2 of netting, the whole wighing a total of 2.1 tonnes. Paying tribute to the great 20th-century visionary novelist, the portrait was backed by a show held within the Tower, entitled ''Jules Verne 2000, travel to unknown worlds''.

The Eiffel Tower under ice floe

On 25th February, French President Jacques Chirac commemorated the 50th anniversary of the French polar expeditions through a tribute to Paul-Emile Victor. The first-floor platform was turned into an ice floe, complete with penguins and figures dressed in polar clothing, surrounded by tracked vehicles, sleighs and scientific equipment.

The Eiffel Tower was built for the International Exhibition of Paris of 1889 commemorating the centenary of the French Revolution. The Prince of Wales, later King Edward VII of England, opened the tower. Of the 700 proposals submitted in a design competition, Gustave Eiffel's was unanimously chosen. However it was not accepted by all at first, and a petition of 300 names - including those of Maupassant, Emile Zola, Charles Garnier (architect of the Opéra Garnier), and Dumas the Younger - protested its construction.
At 300 meters (320.75 m including antenna), and 7,000 tons, it was the world's tallest building until 1930. Other statistics include:

2.5 million rivets

300 steel workers, and 2 years (1887-1889) to construct it.

Sway of at most 12 cm in high winds.

Height varies up to 15 cm depending on temperature.

15,000 iron pieces (excluding rivets). 40 tons of paint. 1652 steps to the top.

In 1889, Gustave Eiffel began to fit the peak of the tower as an observation station to measure the speed of wind. He also encouraged several scientific experiments including Foucault's giant pendulum, a mercury barometer and the first experiment of radio transmission. In 1898, Eugene Ducretet at the Pantheon, received signals from the tower.

After Gustave Eiffel experiments in the field of meterology, he begun to look at the effects of wind and air resistance, the science that would later be termed aerodynamics, which has become a large part of both military and commercial aviation as well as rocket technology. Gustave Eiffel imagined an automatic device sliding along a cable that was stretched between the ground and the second floor of the Eiffel Tower. (reference)
The tower was almost torn down in 1909, but was saved because of its antenna used both for military and other purposes, and the city let it stand after the permit expired. When the tower played an important role in capturing the infamous spy Mata Hari during World War I, it gained such importance to the French people that there was no more thought of demolishing it.- used for telegraphy at that time.

From 1910 and on the Eiffel Tower became part of the International Time Service. French radio (since 1918), and French television (since 1957) have also made use of its stature.

During its lifetime, the Eiffel Tower has also witnessed a few strange scenes, including being scaled by a mountaineer in 1954, and parachuted off of in 1984 by two Englishmen. In 1923 a journalist rode a bicycle down from the first level. Some accounts say he rode down the stairs, other accounts suggest the exterior of one of the tower's four legs which slope outward. Of the 7.5 million kilowatt hours of electricity used annually, 580 thousand are used exclusively to illuminate the tower. The tower's annual operation also requires the use of 2 tons of paper for tickets, 4 tons of rag or paper wipes, 10,000 applications of detergents, 400 liters of metal cleansers and 25,000 garbage bags. On the four facades of the tower, the 72 surnames of leading turn-of-the-century French scientists and engineers are engraved in recognition of their contributions to science. This engraving was over painted at the beginning of the 20th century and restored in 1986-1987 by the Société Nouvelle d' Exploitation de la Tour Eiffel, a company contracted to operate business related to the Tower.
